Pork Lettuce Wraps

A 20-minute quick & easy recipe that everyone will love. The pork & rice reheat so well, so be sure to make extra for lunches or leftovers.

Ingredients
  

  • 2 Tbsp Hoisin Sauce
  • 2 Tbsp Dry Sherry (or Red Wine Sherry)
  • 1 Tbsp Dark Soy Sauce
  • 1 Tbsp Oyster Sauce
  • 1 Tbsp Sesame Oil
  • 1 Tbsp Asian Chile Sauce this is spicy! use 1 tsp if you don't like it spicy
  • 3 Cloves Finely Minced Garlic 3 tsp from a jar
  • 2 Green Onions
  • 1-2 lb. pork tenderloin
  • 1 cup pine nuts or peanuts for topping
  • 1 head iceberg or romaine lettuce
  • 2 tbsp oil I use olive oil

Method
 

  1. Combine all marinade ingredients in a bowl and mix well.
  2. Cut the pork into bite size pieces. Coat pork evenly with marinade.
  3. Refrigerate at least 10 minutes, up to 8 hours
  4. Separate lettuce leaves to use as cups.
  5. Place wok or large sautee pan over high heat. Once the pan is hot, add oil and let it heat up quickly.
  6. Add pork to the pan and cook until it loses its pink color (3-5 minutes). Stir in nuts if adding them.
  7. Wrap the pork in lettuce leaves. We add rice to the lettuce leaves, but it would be good on the side too. I also serve with a steamed veggie or a fruit.
